Not too long ago, I showed you some chocolate chip oatmeal cookies. Chocolate chip oatmeal cookies are great, but after having one or two of them, I thought to myself “You know what would be even better?? Coconut oatmeal cookies” (the grass is always greener on the other side, right?). So of course, I had to make some.
The secret to keeping cookies chewy? A tablespoon (or two) of honey, and a short bake time. I was wanting more of a crispy outside/chewy inside kind of cookie, but these guys are soft all the way through. I guess I’ll try with more butter next time? Or maybe I’ll switch to a different kind of oatmeal cookie…!
