Cherry Crumble Cupcakes

It’s berry season! Well, sort of. Berry season is so short, that it’s practically over… but anyways, I had some fresh cherries, and decided to incorporate them into a cupcake. My first thought was some kind of banana split cupcake, but I just did a banana cupcake, and I didn’t really want to add any chocolate here.  I went with a simple vanilla cupcake with vanilla buttercream, topped with some crumble and a fresh cherry. I would have liked to make some kind of cherry sauce to fill or drizzle over these cupcakes, but I ate too many of them right away.  Ah well – c’est la vie!

It’s also so hot here that it was really difficult to get this picture. I had a number of issues in the kitchen, and then a number of issues in the set up – it’s amazing that there was even one cupcake left that was photo-worthy… I really liked the crumble on top though, so I think I will try it again with some future cupcakes (maybe blueberry crumble?!)



The Cupcake Series: Banana Cupcakes

What’s a girl to do with one old, sad, over-ripe banana? One banana is not enough to make a loaf of banana bread, but it is just the right amount for some small batch banana cupcakes! Topped with a whipped cream cheese frosting and a handful of chopped walnuts, and these make the perfect banana-y treat!

Small Batch Banana Cupcakes

Yield: 4


  • 3 Tbsp butter, softened
  • 1/4 cup sugar
  • 1 small (overripe) banana, mashed
  • 1 whole egg
  • 1/2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 cup flour
  • Pinch of salt


  1. Preheat oven to 350°F  and line a cupcake tin with four liners. 
  2. Cream together butter and sugar.
  3. Add banana, egg, and vanilla and mix well.
  4. Add flour, baking soda, and salt. Stir to combine.
  5. Spoon into cupcake tin and bake 15-20 minutes.

Let cool completely before topping with cream cheese frosting.


The Cupcake Series: Biscoff Cupcakes

Guys… if you like cinnamon coffee cake, then I have the cupcake for you. You know those Biscoff cookies? They are the cookies that WestJet hands out during their in-flight service, and apparently these cookies are very popular in Europe. The cookies (or “biscuits”, if we’re being European) taste like cinnamon and burnt sugar – in the best possible way! These thin cookies basically melt in your mouth and taste fantastic with tea or coffee.

The company also makes a cookie butter (or “biscuit spread”) and, let me just say, this cookie butter is so very tasty and really tastes just like the cookies. Anyways, I decided to make a biscoff cupcake. The cupcake is a pretty standard vanilla cupcake made with brown sugar and a pinch of cinnamon. The frosting is buttercream with a generous spoonful of biscoff spread added in. I topped the cupcakes with an extra cookie for good measure. And guys… These cupcakes are insane.


Spring Funfetti Cupcakes

Hello Spring! I (really) hope you are here to stay!

I’m feeling a little celebratory at the arrival of spring on March 20, so I decided to make some small-batch funfetti cupcakes. I modified the recipe from my coconut cupcakes and added in a spoonful of sequin sprinkles (you could also use sprinkle jimmies or nonpareils, but I like how the sequin sprinkles look in the end, and they won’t streak your batter). I topped them with a simple vanilla buttercream and more sprinkles, because why not? Here is the before and after – what do you think?

Chocolate Cupcakes for Valentine’s Day

Because what is Valentine’s Day without a little chocolate?

These cupcakes actually gave me quite a hard time. I wanted to make a “hot chocolate” cupcake, so I was playing around with adding cocoa to the buttercream, or sprinkling hot chocolate mix on top of the frosting, but it didn’t work out so well. I had made some chocolate hearts and chocolate sprinkle shards for the tops of the cupcakes but then I couldn’t really get them placed right… So… Despite my best efforts, at making a fun Valentine’s-Day-themed treat, these are just a plain-Jane chocolate cupcake with plain-Jane vanilla buttercream, and each of them is decorated differently because I couldn’t decide what to do. At least the cupcake liner is pink for Valentine’s Day…?

Triple Chocolate Cupcakes

This week I made some cupcakes in honour of my little sister’s birthday. She has an ENORMOUS sweet tooth (we’re talking – no qualms about eating cake for breakfast, lunch, and dinner!), and her favourite candy as a kid was Rolos. With her in mind, I made some simple chocolate cupcakes that were then covered with a generous amount of chocolate buttercream and a pile of different chocolate candies. I had fun arranging the candy and trying different combinations. In the end, this was what I decided on.

The result? An indulgent chocolate-on-chocolate-on-chocolate birthday treat! Happy Birthday to my Little Sister!
